Story
The Journey
The journey began in 2017, when George Katsipis set out with a simple yet powerful idea to carry with him the timeless values of his family and the unique flavors he remembered from his childhood.
Deeply rooted in the soil of Santorini, his family had long nurtured a profound respect and love for the land, crafting pure, rare products that stood out for their quality and honesty.

A Taste of the Land
Eptazymo Bread & Yogurt Dip
Traditional chickpea-leavened bread, dense and full of character, served warm with a refreshing dip made from Greek yogurt, mint, and wild thyme. A chef explains the fermentation process and the bread’s cultural roots.
Santorini Salad
A colorful mix of Santorini cherry tomatoes, katsouni (island cucumber), chloro cheese, olives, capers, and local olive oil. Presented with a story about the island’s unique microclimate that gives these ingredients their distinctive taste.
Fava
A smooth yellow split pea purée, elevated with caramelized onions, capers, and a drizzle of extra virgin olive oil. Served with local lore about how this humble dish became an island staple for generations.
Tomatokeftedes
Crispy tomato fritters infused with herbs and onions, served piping hot. Guests learn about the volcanic-grown cherry tomatoes that make this dish unlike any other in Greece.
